I’m trying to work out how to ask for any information the DHS has on this specific organization but I can’t figure out a way to narrow the scope enough so they’ll accept the request but still be broad enough to get anything from the search.

It would be much easier to get the records if you specify where you think they are. There are many offices within the DHS, and many will have nothing to do with your request. Check here: https://www.dhs.gov/operational-and-support-components and pick the ones you think might have something.
