The response includes several entries marked “Secured Record” with no other details. Is there anything I can request that would provide more details about these entries?

Now that you have the log of communications, I would submit a new request for communications of interest. While the “Secured Record” entries may be classified or otherwise exempt from disclosure, it looks like quite a few should be releasable at least in part, if not in their entirety.

Would there be any documentation around why they were classified (or otherwise omitted) or by whom that I could request details of?

It feels like there has to be something, I just don’t know enough about the processes involved to know what to ask for.
